Spring Supper Clubs

We hope you all had a great Christmas and New Year.  We were busy catering for various events and parties in December, and then spent January in Colombia, checking up on the family and the coffee farm.  That trip always recharges our batteries, and with memories still fresh of the many great meals we enjoyed and superb food producers and markets we visited, we are inspired to launch a new round of supper clubs!
Whilst the cold wintry weather is still biting, we are conscious that spring is just around the corner (honestly!), and with that in mind we’ve devised three menus for March, April and May, combining some old Sabor favourites with some fresh new dishes, to mark the changing seasons.  The March menu includes hearty pork and oxtail dishes, whilst as the days lengthen we’ll be shifting the emphasis to lighter dishes, including ceviche and red snapper in May. Throughout the spring though, you can rely on our warm hospitality, satisfying and tasty cuisine, and the fun and stimulating company we’ve come to expect from our much-valued supper club guests.

Menu – 23rd & 24th March 2018

Guayava Rum Punch


Pinchos de Cerdo
Coffee-glazed skewers of pork served with a black bean, corn and quinoa salad

Ensalada de Bacalao
Salt cod salad with red peppers, avocado, and pickled garlic-caper remoulade

Rabo Encendido
Tender slow braised oxtail in a fiery rioja wine sauce with roast garlic and yuca m. Accompanied by a sweet plantain and ginger flan

Black quinoa and chocolate cake with guanabana ice cream

Passion Fruit Margarita


Quesadillas de Chorizo

Flour tortillas stuffed with Colombian pork sausages, mozarella cheese, tomatoes, and ancho chilli, served with green tomato salsa

Swordfish Escabeche

Swordfish grilled then marinated in a red wine vinaigrette, served at room temperature with mixed peppers and tostones (grilled plantain) and aioli

Cordero con Quinoa

Grilled rack of lamb served with papaya, rosemary and garlic salsa and Bolivian quinoa, and orange salad


Lime and banana ravioli

Passion Daiquiri



Slices of grouper marinated in tequila, lime and orange juices, with basil, jalapeño chili and red onions

Duck Ropa Vieja Quesadillas

Flour tortillas stuffed with shredded and stewed duck, with mozzarella cheese, tomatoes and ancho chilli, served with guacamole

Pargo Rojo con Gallo Pinto

Pan fried fillet of red snapper with a crispy, spicy, cocoa/chili coating, served with Nicaraguan red beans and rice and a fresh tomato sauce
